Ipdong: Winter Begins, Kimchi Time입동 — 겨울의 시작과 김장
Winter officially begins — and the whole country starts making kimchi.
Ipdong, the nineteenth solar term around November 7, means "winter stands up" — the traditional first day of winter. Its real significance, though, is what it triggers: kimjang, the great annual kimchi-making. Custom held that kimchi tasted best when made within about five days before or after Ipdong, when late-autumn temperatures are cool enough to ferment cabbage slowly without freezing it. For centuries this was a community event — neighbors gathered to salt, stuff, and bury enough kimchi to feed every household through winter, and that culture of collective making and sharing was inscribed by UNESCO as Intangible Cultural Heritage of Humanity in 2013. Ipdong also had a gentler custom: chigyemi. Under village codes dating to the Joseon era, communities pooled gifts and held feasts for their elders on Ipdong, the winter solstice, and New Year's Eve — a built-in welfare tradition at the year's cold turn. Modern Korea has adapted rather than abandoned all this. Families are smaller and many buy kimchi, but November still brings discount cabbage sales, workplace kimjang volunteering, a dedicated kimchi refrigerator in most homes, and the Seoul Kimjang Culture Festival, where thousands of people — travelers welcome — make kimchi together in the middle of the city.
입동(立冬)은 11월 7일 무렵의 열아홉 번째 절기로, '겨울이 일어선다'는 뜻 — 전통적인 겨울의 첫날이다. 하지만 입동의 진짜 의미는 이 날이 방아쇠가 되어 시작되는 일에 있다. 바로 김장이다. 김치는 입동 전후 닷새 안에 담가야 가장 맛있다는 것이 오랜 통념이었다. 늦가을 기온이 배추를 얼리지 않으면서 천천히 발효시키기에 딱 알맞기 때문이다. 수백 년 동안 김장은 공동체의 행사였다. 이웃이 모여 절이고 버무리고 묻어, 온 집이 겨울을 날 김치를 함께 마련했다. 이 '함께 담그고 나누는' 문화는 2013년 유네스코 인류무형문화유산에 등재됐다. 입동에는 더 따뜻한 풍속도 있었다. 치계미다. 조선 시대 향약에 따라 마을은 입동·동지·섣달그믐에 어르신들을 모셔 음식을 대접하고 선물을 드렸다 — 한 해의 추운 길목마다 작동하는 공동체 복지였던 셈이다. 현대 한국은 이 전통을 버리지 않고 바꿔 이어간다. 가족은 작아졌고 김치를 사 먹는 집도 많지만, 11월이면 배추 할인 판매가 열리고, 직장마다 김장 봉사가 이어지고, 대부분의 집에 김치냉장고가 있으며, 서울 한복판에서는 수천 명이 — 여행자도 함께 — 김치를 담그는 서울김장문화제가 열린다.

If you are ever invited to a family kimjang, wear clothes you don't mind staining, and expect the traditional reward: boiled pork (bossam) wrapped with just-made kimchi.
