Two dates on Korea's old calendar declare winter over — one when snow turns to rain, one when the frogs wake up.
Korea's traditional calendar divides the year into 24 solar terms (jeolgi), and two of them announce the end of winter. Usu, meaning 'rain water,' falls around February 18–19: from this point snow is supposed to turn to rain, and frozen ground begins to soften. Gyeongchip, around March 5–6, means 'awakening of insects' — the day frogs and bugs are said to crawl out of hibernation. An old proverb claims that 'by Usu and Gyeongchip, even the Daedong River thaws,' meaning even the coldest northern river must give way to spring.
These terms come from Korea's agrarian past, when farmers needed reliable signals to start preparing fields. Despite the 'lunar calendar' reputation, solar terms are fixed by the sun's position, which is why the dates barely move from year to year. Gyeongchip also has a taste: around this time, people head to mountain villages near Jirisan to drink gorosoe — sap tapped from painted maple trees, long believed to restore the body after winter. The sap flows well for only a few weeks, so timing matters.
Today you will still hear Usu and Gyeongchip in weather forecasts and small talk. When a cold snap hits in March, Koreans shrug it off as kkotsaem chuwi — 'the cold that envies the flowers' — because after Gyeongchip, everyone knows winter has already lost.
한국의 전통 달력은 한 해를 24절기로 나누는데, 그중 두 절기가 겨울의 끝을 알린다. 2월 18~19일 무렵의 우수(雨水)는 '눈이 비로 바뀌는 때'라는 뜻으로, 이때부터 언 땅이 풀리기 시작한다. 3월 5~6일 무렵의 경칩(驚蟄)은 '벌레가 놀라 깨어난다'는 뜻 — 겨울잠 자던 개구리와 벌레가 나오는 날로 여겨졌다. '우수 경칩에 대동강 풀린다'는 속담처럼, 가장 추운 북쪽 강도 이 무렵이면 봄에 자리를 내준다.
절기는 농경 사회의 유산이다. 농부들에게는 밭일을 시작할 믿을 만한 신호가 필요했고, 절기는 태양의 위치로 정해지기 때문에 해마다 날짜가 거의 변하지 않는다. 경칩에는 맛도 있다. 이 무렵 지리산 자락 산촌에서는 고로쇠나무 수액을 마시는 풍습이 이어진다. 긴 겨울을 난 몸에 좋다고 믿어 온 물로, 수액이 잘 나오는 기간이 몇 주뿐이라 때를 맞춰야 한다.
지금도 일기예보와 일상 대화에 우수·경칩이 등장한다. 3월에 꽃샘추위가 와도 한국인들이 크게 동요하지 않는 이유 — 경칩이 지났으면 겨울은 이미 진 것이기 때문이다.

Tips.팁. Gorosoe sap season lasts only a few weeks around Gyeongchip — festival dates shift yearly, so check before going. Dress in layers: March cold snaps (kkotsaem chuwi) are real. Sap is served fresh in large bottles at village stalls; it tastes like faintly sweet mineral water.
