Kimjang: Making and Sharing Kimchi김장문화 (유네스코 무형유산)
UNESCO didn't list kimchi the food — it listed the act of making it together and giving it away.
Kimjang is Korea's late-autumn tradition of making kimchi in bulk — enough to feed a household through the winter. Before refrigeration and greenhouses, winter in Korea meant almost no fresh vegetables, so families preserved napa cabbage and radish with chili, garlic, and fermented seafood in a massive communal work session each November. Neighbors and relatives gathered, salted hundreds of cabbages, mixed seasoning by hand, and — crucially — shared the results, making sure no household faced winter without kimchi. That is exactly what UNESCO recognized in 2013: not kimchi the dish, but 'Kimjang, making and sharing kimchi' as Intangible Cultural Heritage of Humanity, citing how the practice strengthens family cooperation and community identity across class and regional lines. Recipes are family heirlooms, traditionally passed from a mother-in-law to a newly married daughter-in-law, and every region and household insists theirs is correct. Kimjang survives today in modernized form: families still gather on a chosen weekend in November or early December, apartment complexes and churches organize group sessions, and companies hold charity kimjang events where volunteers make tons of kimchi for elderly neighbors living alone. If you are invited to one, go — sore back, chili-stained gloves, and the ritual first taste of fresh kimchi wrapped in boiled pork are the real Korea.
김장은 늦가을에 겨우내 먹을 김치를 한꺼번에 담그는 한국의 전통이다. 냉장고도 비닐하우스도 없던 시절, 한국의 겨울은 신선한 채소를 거의 구할 수 없는 계절이었다. 그래서 가족들은 매년 11월 무렵 배추와 무를 고춧가루, 마늘, 젓갈로 버무려 대량으로 저장하는 큰 공동 작업을 벌였다. 이웃과 친척이 모여 수백 포기 배추를 절이고 손으로 양념을 버무렸으며, 무엇보다 결과물을 서로 나눠 어떤 집도 김치 없이 겨울을 나지 않도록 했다. 2013년 유네스코가 인류무형문화유산으로 등재한 것이 바로 이 지점이다. 등재 명칭은 김치라는 음식이 아니라 '김장, 김치를 담그고 나누는 문화'다. 계층과 지역을 넘어 가족의 협력과 공동체 정체성을 다지는 실천이라는 점이 평가됐다. 김장 레시피는 집안의 유산으로, 전통적으로 시어머니가 새 며느리에게 전수했고 지금도 집집마다 '우리 집 김치가 정답'이라 믿는다. 오늘날 김장은 현대화된 형태로 살아 있다. 11월~12월 초 주말에 가족이 모이고, 아파트 단지·교회가 단체 김장을 열고, 기업들은 독거 어르신을 위한 나눔 김장 봉사를 연다. 초대받으면 꼭 가보자. 뻐근한 허리, 고춧가루 묻은 장갑, 갓 버무린 김치를 수육에 싸 먹는 첫 맛 — 그게 진짜 한국이다.

Tips.팁. The single best experience is a hands-on kimjang class — you salt, stuff, and take your kimchi home in a sealed pack (note: it cannot fly in carry-on luggage; check it or eat it). If a Korean friend's family invites you to kimjang, accept — bring work clothes, expect to eat fresh kimchi with suyuk (boiled pork) on the spot, and never refuse the kimchi they send you home with; sharing is the whole point. Museum Kimchikan is closed Mondays.
