Sambok: The Three Dog Days and Samgyetang삼복 — 초복·중복·말복과 삼계탕
On Korea's hottest days, everyone lines up for boiling-hot chicken soup — on purpose.
Sambok is the name for Korea's three hottest days of summer — Chobok, Jungbok, and Malbok — which fall between mid-July and mid-August, roughly ten days apart, on dates set by the traditional calendar. The character bok (伏) combines 'person' (人) and 'dog' (犬), depicting prostration — lying low, flat on the ground: that is exactly the mood these days mark. The curious part is what Koreans eat. Instead of something cold, the classic bok-day meal is samgyetang, a whole young chicken stuffed with glutinous rice, ginseng, jujubes, and garlic, served at a rolling boil. The logic is iyeolchiyeol — 'fight heat with heat.' Sweating through summer drains the body, so a hot, nourishing soup restores what the season takes away. Historically, dog meat soup (bosintang) was also a bok-day food, but consumption has fallen sharply, and in January 2024 Korea passed a law ending the breeding, slaughter, and sale of dog meat from February 2027. Today samgyetang is the undisputed bok-day dish: on Chobok, famous restaurants see lines stretch down the block, and office workers plan their lunch around it. Join the queue once — sweating over ginseng chicken in midsummer is one of the most Korean things you can do.
삼복은 한국에서 가장 더운 세 날—초복·중복·말복—을 가리키는 말로, 전통 역법에 따라 7월 중순에서 8월 중순 사이에 약 열흘 간격으로 찾아온다. '복(伏)' 자는 사람 인(人)에 개 견(犬)을 더한 글자로, 엎드려 있는 모습을 나타낸다 — 이 시기의 기분을 정확히 담고 있다. 흥미로운 것은 이날 먹는 음식이다. 시원한 것이 아니라, 영계 뱃속에 찹쌀·인삼·대추·마늘을 채워 펄펄 끓여 낸 삼계탕이 대표 복날 음식이다. 원리는 '이열치열'—더위는 더위로 다스린다는 것. 여름내 땀으로 빠져나간 기력을 뜨겁고 든든한 한 그릇으로 되살린다는 오랜 지혜다. 과거에는 보신탕도 복날 음식이었지만 소비가 크게 줄었고, 2024년 1월 개 식용 목적의 사육·도살·판매를 2027년 2월부터 금지하는 법이 통과됐다. 이제 복날의 주인공은 명실상부 삼계탕이다. 초복이면 유명 삼계탕집 앞에 긴 줄이 늘어서고, 직장인들은 점심 계획을 복날에 맞춘다. 한여름에 땀 흘리며 삼계탕을 비우는 경험—가장 한국다운 하루로 꼽을 만하다.

Tips.팁. On actual bok days, popular samgyetang restaurants can have hour-plus queues — arrive before noon or after 2 p.m. The soup arrives unsalted and boiling: season it yourself with the salt and pepper on the table, and let it cool a minute before diving in.
