Hamheung Naengmyeonok 함흥냉면옥

Opened in 1951 by a refugee from Hamgyong province, this is credited as the restaurant where the 'Hamhung naengmyeon' genre began: chewy potato-starch noodles crowned with spicy marinated pollack sashimi. Order the signature hoe-naengmyeon, mix it thoroughly before eating, and add the table vinegar and mustard to taste; a bowl of warm broth comes alongside to cut the chill. It sits on the Cheongchoho lakeside road within walking distance of the central market, and closes by early evening.

Local context

The state designated it a 'centennial store', and locals treat a bowl here as eating displaced-persons history rather than just lunch. Summer weekends bring lines, so locals go at off-hours; it stays open year-round but stops serving around 8:30pm.
