Ipha & Soman: Summer Begins, Barley Ripens입하·소만 — 여름 문턱, 보리가 익는다

Korea's greenest weeks in May were once its hungriest — the 'barley hump' explains a lot about how Koreans talk about food.

Ipha ('summer rises,' around May 5) and Soman ('small fullness,' around May 21) are the seventh and eighth of Korea's 24 solar terms — the sun-based farming calendar that still quietly structures the Korean year. Ipha announces the start of summer; Soman means the grains in the fields have begun to fill out, but are not yet ripe.

That gap — filling, but not ripe — defined one of the hardest facts of pre-modern Korean life: boritgogae, the 'barley hump.' By May, the rice stored from the previous autumn had run out, while the winter barley would not ripen until early June. For poor farming families, these lush green weeks were the hungriest stretch of the year, endured on bark, wild greens, and thin gruel. The word survives in modern Korean as a metaphor for any lean, hard period.

It is a striking inversion for visitors: the season when Korea looks most abundant was once the season of scarcity. Today the barley that ended the hunger has become scenery. In Gochang, the country's largest barley farm rolls out an ocean of green each spring, and city dwellers drive hours to walk through what their grandparents prayed would ripen faster.

입하(양력 5월 5일 무렵)와 소만(5월 21일 무렵)은 24절기 중 일곱 번째와 여덟 번째 절기다. 입하는 여름이 시작된다는 선언이고, 소만은 들판의 곡식이 '조금씩 차오르기 시작한다'는 뜻이다. 차오르기 시작했을 뿐 아직 여물지는 않았다는 것 — 이 미묘한 간극이 전근대 한국인의 삶에서 가장 혹독한 시기를 만들었다.

바로 '보릿고개'다. 5월이면 지난가을 거둔 쌀은 바닥나고, 겨울을 난 보리는 6월 초에야 익는다. 가난한 농가에게 일 년 중 가장 푸르른 이 몇 주는 역설적으로 가장 배고픈 시기였다. 나물과 나무껍질, 멀건 죽으로 버티던 계절의 기억은 지금도 한국어에 남아, 힘들고 궁핍한 시기를 가리키는 관용어로 쓰인다.

외국인 여행자에게는 뒤집힌 그림이 흥미로울 것이다. 한국이 가장 풍요로워 보이는 계절이 한때는 결핍의 계절이었다는 것. 굶주림을 끝내 준 보리는 이제 풍경이 되었다. 전북 고창의 국내 최대 보리밭에는 봄마다 초록 바다가 펼쳐지고, 도시 사람들은 할아버지 세대가 어서 익기만을 빌던 그 보리밭을 걸으러 몇 시간을 달려온다.

Getting there.가는 법. Gochang: express bus from Seoul Central City Terminal to Gochang (about 3 hours), then a local bus or 15-min taxi to Hagwon Farm. The Agricultural Museum is a short walk from Seodaemun Station (Line 5) in Seoul.

Tips.팁. The barley is at its photogenic deep-green peak during the spring festival window; by early June it turns gold and is cut. Wear comfortable shoes — the field paths are long — and try barley-based dishes (boribap, barley bread) sold on site. The same farm hosts a buckwheat flower festival in autumn.

Best time.가기 좋은 때. Late April to mid-May for green barley (festival season); the fields turn golden in early June just before harvest.
