A Suwon institution operating since 1977 near Hwaseong's north gate, built on one specific combination: crisp pan-fried dumplings dipped into a bowl of spicy-sweet jjolmyeon chewy noodles. Order both, use the dumpling as a scoop for the sauce, and you have understood the house style; it stays open until around 1am, which makes it the natural finish to a night walk along the lit fortress wall from Janganmun to Hwahongmun. The shop is a few minutes on foot from both gates.
