Some thirty stalls inside Andong's old market braise jjimdak — chicken simmered with glass noodles, potatoes and a soy-chili sauce — in the same alley where market vendors improvised the dish out of the 1970s fried-chicken lanes. One platter is sized for two or three people, and you eat it at plain tables shoulder-to-shoulder with local families rather than in a franchise dining room.

Local context

Order one whole-chicken portion per two or three people and tell the kitchen your spice level — the alley recipe runs sweeter and saucier than the chain versions found elsewhere in Korea.
